A little overview about my new cookbook; "In the Land of Misfits, Pirates and Cooks".
It is a cookbook that deals with recipe development in a "Caribb-ican" nature.
In the Caribbean it was explained to me in this way. We use foods from the U.S. and boost it's boldness with our Caribbean ingredients.
Caribb-ican to me always meant menus developed for the US-mainlander and popping the tastes with a few condiments.
You'll see what I mean when you read my cookbook. I use a lot of Florida's favorite seafood, add a little flavor with a few tropical ingredients and plate the whole thing like you might see in the best restaurants in America.
